Goat Cheese crumbled on fresh Red-Leaf Lettuce. Sprinkle with sliced dried dates (seedless), and lightly dress with this dressing: quarter cup extra-virgin olive oil, one Tbsp. red-wine vinegar, one Tbsp. soy-sauce, fresh ground pepper. Toss until cheese is blending with dressing.

quinoa greek salad - quinoa, tomatoes, cucumber, peppers, whatever other veggies you like, greens, feta cheese, some kind of vinaigrette (lemon juice, white wine vinegar, flaxseed oil and thyme is good), salt and pepper... mmm. could also add some tofu, or chicken.

satay salad - spinach, rice noodles, avocado, tofu (or chicken), peanut sauce (pb, ginger, soy sauce, rice vinegar), greens

sushi salad - sushi rice, edamame (shelled), peppers, avocado, tofu, whatever other sushi toppings you like, crumbled nori, bit of wasabi, bit of ginger - could serve this all over greens

taco salad - beans (i like black or chickpea), peppers, corn, tomatoes, avocadoes, salsa, guacamole, greens, eaten in a tortilla. mango and pineapple are also good in this. again, could add chicken.

hope that helps!

One of my favourite salads to make:

Baby spinach
Small bits of avocado
Feta cheese
Raisins
Tomatoes (optional, I just love tomatoes)
Thinly sliced red onions (also optional, especially if eating at work)
Sweet dressing of your choice - I usually go for raspberry viniagrette

I know this is a pretty routine salad but it can be really spiced up if you go creative on the type of raisin + type of cheese combination (like say going for aged cheddar, which is pretty strong, and white raisins).

Another semi-off-topic suggestion is make a quiche! Technically it's breakfast food(so semi-low-cal), it can be eaten hot OR cold, usually contains greens and personally I find them to be quite filling (and I have an awesome recipe if you're interested)

Bacon.
Topped with bacon.
Have you tried bacon salad? bacon, celery, mayo, a little dijon...

actually that doesn't sound too bad :)

EVERYTHING's better with bacon.

If I were George Costanza, I think the holy trinity would be eating BACON in bed, while watching tv and having sex. or maybe just some bacon sizzling in a pan NEXT to the bed for the full sense overload.

I tell ya, if I ever met that girl from "Hot Shots", Little Sizzling Belly, it'd be all over for me...

My favourite salad to make is

Spinach and sometimes add in romaine or leaf lettuce
Tomato
Cucumber
Shredded carrots
Red/Orange/Yellow Pepper (whichever is in the fridge)
Tuna
Sunflower/Pumpkin seeds
Some variety of sprouts

I do it so about half the volume is in greens, half in the rest, and it makes for a hearty salad

And I use any greek style dressing I can find, or just olive oil, squeeze of lemon, oregano, pepper with a little finely crumbled feta.

I don't find any need for starchy carbs after that, but sometimes I have a bit of pita bread, too, even scoop some of the (rather heavy) salad into it and have it that way.

Mmm Mmm Good
